Dedun's Recipe: White Cupcakes with Variations
Cupcakes anyone? If you don't like cupcakes, you are missing out. Why won't anyone like cupcakes anyway? Delicious little ones. If you love them, then you are in luck today. I'm sharing the recipe for my classic vanilla cupcake. My customers love it and I hope you do too.
Ingredients
1cup Flour
1tsp Baking Powder
Pinch of Salt
3/4cup Sugar
2 Eggs
75g Butter Melted
1/2 cup Milk
1tsp Vanilla
Steps
*Preheat the oven to 180degreesC/Mark 4
*Sift the flour, baking powder and salt in a bowl.
*In another bowl, beat the eggs with the sugar until fluffy/pale. Add the vanilla and mix for 2 minutes.
*Add the melted butter and whisk thoroughly until incorporated.
*Add the dry ingredients and milk in 2 batches, finishing with the dry ingredients.
*Don't over-mix!!! Important. Once all your ingredients have been incorporated together, pour batter into cupcake papers, filling two-third of the paper. Don't overfill.
*Bake for 15 minutes or until inserted skewer comes out clean .
Variations
-If you want chocolate cupcakes, Sift 1/4cup of cocoa powder with the dry ingredients.
-If you want red velvet cupcakes, Sift 2tbsp of cocoa powder with the dry ingredients and add 6tbsp of
Red coloring to the milk.
-If you want orange cupcakes, Exclude the milk!!!! (very important). Add 1/4tsp of orange zest to the eggs and sugar mixture and 2tbsp fresh orange juice. You'll have a much thicker batter than the rest because of the milk that was excluded.
