Honestly, it really is the best apple cake I've eaten.. well it's the only one I've eaten though. lool. Usually when I try new recipes for the cake packs I make here, I don't taste them. I just wait for the feedbacks. Reason being that I might find something I don't like and would convince myself to make another batch. I am my worst critic hence I just avoid the wastefulness by not tasting it until I've gotten feedbacks then I try the one I reserved for myself.. BUT in this case, the cake was too inviting for me to resist. Not only was it soft, the aroma while it was baking was just too tempting. So I've chosen it to be the first recipe I share this year. I'm sorry once again for the very long hiatus. I'm back now and I will try my utmost best to find time within my crazy schedule to update as often as I can. Thanks for understanding. Now let's get to it!

This measurement is for a regular loaf pan.
INGREDIENTS
140g Plain flour
140g Brown Sugar
175g Butter {at room temperature}
2 tbsp Strawberry Jam
2 Eggs
1 tbsp Baking powder
1 tsp Ground cinnamon
1 tsp Ginger
1 tsp Nutmeg
100g Ground Mixed nuts (I used almonds,walnuts)
50g Chocolate Chips (chopped)
2 Apples (washed, peeled, cored and chopped)
INSTRUCTIONS
*Preheat oven to 170 Celcius/Gas mark 3.
*Put the butter,sugar and jam in a bowl and cream until light anf fluffy.
*Add the eggs one at a time, mixing well and scraping the sides of the bowl after each addition.
*In another bowl, sift together the flour, sugar,baking powder,cinnamon, ginger, nutmeg, HALF of the chocolate chips. Then beat into the butter mixture gradually until all is incorporated.
*Stir in the nuts, apples and the remaining chocolate chips.
*Transfer to the loaf pan and smooth over with a knife or spoon.
*Bake for 1 hour. You can check if it's done with a skewer after 50 mins.
*Leave to cool in the pan for 10 minutes before transferring to a cooling rack.
Dedun's tip: don't leave your cake out in the open on the rack. Put it in a clear roasting bag and let it cool in there. This helps to avoid the crust from hardening. Just imagine leaving your bread unwrapped. Yup same thing with cakes.
