This cake needs no intro but I'll give it anyway. This is my favorite cake. I really don't know why. Oh I do! It was the first cake I perfected! At a point in time, I was just baking Red Velvet cake like no man's business. Eventually my fellow Nigerians in Debrecen finally got the hang of it and now, it's my best selling cake (alongside Vanilla) . For beginners you might not get the hang of it quickly but the trick in this Recipe is to make sure your butter and sugar mixture is very fluffy. By the way in the pictures, the recipe was halved because I was making a layered cake of red velvet and vanilla, hence why the ingredients look small.
Ingredients
*2.5cups Flour
*1.5cups Granulated Sugar
*12g Baking Powder
*1/4Cup Cocoa Powder
*100g Butter
*1cup Buttermilk
*2 Eggs
*1tsp Vanilla
*3Tbsp Red Food Color
*1tsp Salt
Steps
*Preheat oven at 180 degree C. Grease the cake pan.
*Sift the flour, baking powder, salt and cocoa powder together.
*In a mixing bowl, put the butter and pour the sugar. With an electric mixer, whisk until very pale and fluffy. Pictures of the stages below.
*When the butter and sugar mixture is fluffy, add the eggs.Whisk till smooth. Add the vanilla.
*Add one-third of the flour mixture, mix. Add half of the milk, mix. Add another one-third of flour mixture and mix again.Add the remaining milk. Don't overmix
*Add the red color and now add the remaining one-third of the flour mixture.
*Bake for 40 mins. Insert skewer to check if it's done. Cool on a rack.

Deleteand for buttermilk, i wrote it in another post. for a cup of whole milk, add one tbsp of vinegar and let it sit for 20mins
