INGREDIENTS
1 cup Sugar
1/4 cup Water
1/4 tsp lemon juice
3/4 cup Heavy cream (Whipping cream)
2 tbsp butter
1 tsp Vanilla
On the side you need a cup of water and a pastry brush
INSTRUCTIONS
* In a sauce pan, combine sugar, water and lemon juice.
tip: lemon juice helps to prevent crystallization.
*Boil on medium heat. Do not stir. Instead, swirl the pan and used the wet pastry brush to remove the crystallized sugar on the walls of the pot.
*When the color starts to change, continue to swirl the pan until you have a uniform brown color. If you want an intense taste u can leave it to brown a bit deeper. Be careful as it may overcook and give your sauce a bitter taste.
*Turn off the heat. Stir in the heavy cream. Please be careful as this may splash and cause skin burns. So be sure to stir it in slowly
*Add the butter and vanilla and stir till you have a creamy and smooth Caramel sauce.
*Use as you wish.
