I was minding my business one random day when I suddenly saw a very nice picture of buns. It didn't take me a second to decide I'm going to try that out. For someone that doesn't buy store bread, I really wanted to nail it so I could have something to munch on for breakfast for the week. You guessed right, I succeeded. Let's get right to it.
Raisins are optional in this recipe but trust me on this, the raisins gave it the extra push it needed. If you have a dough mixer, this will be a very easy recipe for you to carry out but if you are using your hands, I wish you very well. The most important part of bread is kneading! and I really do not have the strength to knead manually. yep I'm lazy like that.
Prep Time: 40 minutes
Proofing Time: at least 1 hour
Baking Time: 25 minutes
Total time: 2 hours 5minutes
Makes: 12 regular sized buns
INGREDIENTS
2 cups All purpose flour
1 cup Bread flour
12g of dry yeast
1 tsp salt
170g Butter (softened)
1/2 cup Granulated Sugar
4 Eggs (+ 1 extra for egg wash)
150g Raisins
1 tsp Vanilla extract
1 cup of hot water
1/4 cup Milk (60ml)
Poppy seeds (optional)
INSTRUCTIONS
* Put the raisins in a bowl, add the hot water and vanilla extract. Cover for 15mins. Afterwards, drain the water and set aside.
* In a mixer bowl, add the flour, sugar, salt, yeast, milk and eggs. Turn on your mixer and with the dough hook, knead for 20 minutes. If you are doing this step manually, please add extra 5-10mins (Total being 25-30mins)
*After kneading, add the butter one piece at a time while the mixer is still on.
*Knead again for another 10mins or 15mins if kneading manually. This would make the total kneading time using a dough mixer to be 30 minutes and if manually, 40 minutes.
*Transfer to a kneading mat, add the raisins and gently knead with your hands to incorporate the raisins.
*Take you rectangle pan, lightly spray with a pan coat. Cut out small pieces from your dough and make them circle, place them in the pan. Repeat this until everything is rolled up into buns. Cover with a damp clothe or plastic wrap and place in a warm place (warm oven..not hot!) for at least 1 hour.
*When it has doubled in size, remove from oven, preheat the oven for 5-10 minutes at 180 degree Celsius.
*Whisk the extra egg and lightly brush the egg on the buns. Sprinkle the poppy seeds if you are using them. Place your pan in the hot oven. Bake for 20-25 minutes.
