Confession.. I don't like baking chocolate cakes. When someone orders it, my heart sinks a little. Why? because they dry out so quickly while cooling. I really don't know why that happens. I've tried changing recipes, include more fluid (eg hot water) but still I wasn't satisfied. Hot water helped though until I stumbled on this recipe on theplayhouseblog. Amazing! and guess what, no mixer needed. It could also work as a brownie recipe if you are not into the very moist brownies. Also you can change this recipe into a peanut butter cake! Just replace the cocoa powder with peanut butter. Thank me later.
INGREDIENTS
2 cups Flour
2 cups Brown sugar
1tsp baking soda/powder
250g Butter
5 tbsp Cocoa Powder
1/2 cup hot water
1/2 cup instant coffee(liquid)
Pinch of salt
2 Eggs
1/2 cup Buttermilk
1tsp Vanilla extract
200g Chocolate chips
INSTRUCTIONS
*Preheat oven to 180degrees celcius/gas 4
* Combine dry ingredients.
*In a saucepan, combine butter, cocoa powder, coffee, vanilla and hot water. Put on medium heat and stir till butter has melted. Turn off the heat
* While stirring, add the dry ingredients and mix till it's all incorporated.
* Add the eggs and buttermilk and stir till incorporated. Then finish off by adding the chocolate chips.
Side note: as a not so loyal chocolate cake fan, I love eating them while they are warm(without frosting).. so if you would like to take it a step further and add a frosting, here is a quick one:
*Combine 125g of butter, 4tbsp Milk, 4tbsp cocoa powder, 1tsp Vanilla, bring to a boil and add 500g of powdered sugar and stir continuously till all the sugar melts.. Pour immediately on your hot cake.
