Confession.. I don't like baking chocolate cakes. When someone orders it, my heart sinks a little. Why? because they dry out so quickly while cooling. I really don't know why that happens. I've tried changing recipes, include more fluid (eg hot water) but still I wasn't satisfied. Hot water helped though until I stumbled on this recipe on theplayhouseblog. Amazing! and guess what, no mixer needed. It could also work as a brownie recipe if you are not into the very moist brownies. Also you can change this recipe into a peanut butter cake! Just replace the cocoa powder with peanut butter. Thank me later.


INGREDIENTS

2 cups Flour
2 cups Brown sugar
1tsp baking soda/powder
250g Butter
5 tbsp Cocoa Powder
1/2 cup hot water
1/2 cup instant coffee(liquid)
Pinch of salt
2 Eggs
1/2 cup Buttermilk
1tsp Vanilla extract
200g Chocolate chips

I honestly don't know why I decided to make this cake as I'm not an avid fan of cheesecakes. I guess I was just interested in making a cheesecake.. and instead of having it alone, I made a pan of blue velvet cake and voila! you have layers of blue velvet and cheesecake with cream cheese frosting!! Yummy. I must warn you though, the cheese cake part is time consuming but if you don't mind a challenge, let's start.

THE CHEESECAKE NEEDS A RESTING TIME THAT WILL LAST MINIMUM 6HOURS IN THE FRIDGE.

INGREDIENTS

For blue velvet cake, please refer to my red velvet cake recipe and replace the red food color with blue (preferably powder because it is stronger than liquid color). If you wish, you can just make a red velvet cheesecake instead.

For Cheese cake

PS: YOU DO NOT NEED A CRUMB BASE FOR THIS.

* 900g Cream Cheese
* 200g Caster Sugar
* 4 Eggs
* 1tsp Vanilla extract

(you can half this recipe if making a smaller cake)

I know it's weird sharing a pancake recipe but this is a good one trust me. Very fluffy, silky, doesn't break and rich!! Serve along with my caramel sauce recipe link here and you have one lovely breakfast!! This is my go to recipe and I definitely love it.

INGREDIENTS

1 cup Flour
3 tbsp Sugar (less or more as you wish)
3 Eggs
30g Melted butter
2 Cups Warm Milk
1/4 tsp Salt
1/2 tsp Cinnamon (optional)
1/2 tsp Nutmeg
Caramel Sauce for serving

I was minding my business one random day when I suddenly saw a very nice picture of buns. It didn't take me a second to decide I'm going to try that out. For someone that doesn't buy store bread, I really wanted to nail it so I could have something to munch on for breakfast for the week. You guessed right, I succeeded. Let's get right to it.

Raisins are optional in this recipe but trust me on this, the raisins gave it the extra push it needed. If you have a dough mixer, this will be a very easy recipe for you to carry out but if you are using your hands, I wish you very well. The most important part of bread is kneading! and I really do not have the strength to knead manually. yep I'm lazy like that.

Prep Time: 40 minutes
Proofing Time: at least 1 hour
Baking Time: 25 minutes
Total time: 2 hours 5minutes
Makes: 12 regular sized buns

You definitely need a jar of caramel sauce in your kitchen!And it's summer. Perfect season to indulge in waffles with caramel sauce, pancakes with caramel sauce, ice cream with caramel sauce, strawberries dipped in caramel sauce. The list is endless... and more perfect is butterscotch cake!! Oh yes, I make my butterscotch cake with caramel sauce. That's my secret ingredient. oops.. don't worry recipe would be shared soon.



INGREDIENTS

1 cup Sugar
1/4 cup Water
1/4 tsp lemon juice
3/4 cup Heavy cream (Whipping cream)
2 tbsp butter
1 tsp Vanilla

On the side you need a cup of water and a pastry brush

Happy Easter to you all. Hope the short break was fun for you. Today's recipe was requested by someone that liked the white chocolate I baked few days ago. Unfortunately I didnt take pictures while baking so there won't be pictorials just instructions. As time goes on, when I do the flavor again, I will update with pictures. Let's bake!

INGREDIENTS

1.5 cups Flour
1 cup Sugar
3 Eggs
1 tsp Baking powder
Pinch of salt
0.5 cup Whole Milk
0.5 cup Oil/ Melted butter
1tsp Vanilla
150g Baking White Chocolate bar or chips

This would make a small 20cm round pan.

 Like I promised to share in the previous post, this is the recipe for cream cheese icing. It is relatively easy to do and takes less than 5 minutes. I rarely measure the ingredients because I've done it countless number of times but never the less, here are the measurements.

INGREDIENTS

300g Powdered Sugar
100g Butter
150g Cream Cheese
Drop of Vanilla (optional or any flavor you want)


INSTRUCTION

* Sift the powdered sugar into a mixing bowl. Add the butter, cream cheese and flavor.
